Heirloom Tomato Salad with Tahini & Mint
- 2 heirloom tomatoes, ripe
- olive oil, maybe 3-4 tablespoons
- tahini, maybe 2 tablespoons
- 2 stalks mint, leaves separated and ripped apart
- a few pinches of kosher salt
- a healthily large dose of fresh ground pepper
- a sprinkling of paprika
- a sprinkling of dried or fresh oregano
- 2 squirts lemon juice (~1 lemon worth)
Steps:
- slice the tomatoes into half-inch-thick rounds. Spread out on a plate or platter.
- sprinkle on half the salt
- drizzle with olive oil and tahini to taste
- sprinkle on the mint, oregano, paprika, and pepper.
- Squirt on the lemon juice and top with the remaining salt
- Eat relatively soon.
